Aljaff and Larrouy’s journey to Schmuck began with significant buzz, fueled by successful pop-up events in Midtown Manhattan and the Financial District. The duo, renowned for their cocktail expertise, particularly Aljaff’s recognition in the Bacardi Legacy Global cocktail competition and the success of their Barcelona bar, Two Schmucks, generated considerable excitement for their New York venture. However, their initial projected opening date in August came and went, leaving patrons eager for a taste of their innovative cocktails and Mediterranean-French fusion cuisine. Unforeseen contractor issues not only delayed the opening but also forced Aljaff and Larrouy to take matters into their own hands, literally. This unexpected detour, while challenging, provided a unique opportunity to intimately shape the physical manifestation of their vision.

The decision to take over the construction themselves stemmed from both budgetary constraints and escalating timeline pressures. Continuing with the original contractor proved financially unsustainable, prompting the resourceful duo to embrace a hands-on approach. This shift in roles, from mixologists to construction managers, required them to adapt quickly, leveraging their existing management skills to oversee the project and learn new trades along the way. While acknowledging the daunting nature of the undertaking, Aljaff and Larrouy viewed this challenge as an extension of their creative process, akin to crafting a complex cocktail but on a much grander scale.
